In this class we will start off by making the graham craquelin that tops our choux before going in the oven. We will then make the choux paste, pipe the dough and bake them off! While the cream puffs bake we will make our pumpkin custard. Once cooled the puffs will be filled with fresh cream spiked with spices, the pumpkin custard and garnished with cream and a chocolate accent. Each student will take home 6 large cream puffs.
