Key Lime Choux au Craquelin (Cream Puff)

In this class we will start off by making the graham craquelin that tops our choux before going in the oven. We will then make the choux paste, pipe the dough and bake them off! While the cream puffs bake we will make the lime curd. Once cooled the puffs will be filled with fresh lime cream, the lime curd and garnished with meringue and candied lime zest. Each student will take home 6 large cream puffs.
