
Choux au Craquelin (Cream Puff)

In this class we will start off by making the craquelin that tops our choux before going in the oven. We will then make the choux paste, pipe the dough and bake them off! While the cream puffs bake we will make the chocolate and caramel sauces. Once cooled the puffs will be filled with fresh cream and garnished with the chocolate ganache, salted caramel and gold leaf! Each student will take home 6 large cream puffs.
