Pumpkin Spice Choux au Craquelin (Cream Puff)

In this class we will start off by making the spiced craquelin that tops our choux before going in the oven. We will then make the choux paste, pipe the dough and bake them off! While the cream puffs bake we will make the pumpkin pastry cream. Once cooled the puffs will be filled with cinnamon scented whipping cream,  Topped with our pumpkin pastry cream and then garnished with cream and bronzed chocolate curl. Each student will take home 6 large cream puffs.
